It's Been Awhile...June and July

We ate soup like this every meal for about 3 weeks.
     So a ton has happened since May. We've been faithfully sticking to the GAPS and Candida diet (except I've been using stevia in some stuff). We actually went through the whole intro, which was pretty legit and consisted of a lot of soup, but we survived, barely. Thankfully, the diet has helped Nath go 2 months without any allergy/asthma medication (first time since junior high) and my stomach no longer hurts every time I eat. So I would definitely say the sacrifices of no sugar, grain, chocolate, dairy, etc. have been worth it for the both of us. We both greatly miss pizza, which once we can have cheese again I'm going to make a GAPS pizza. My birthday happened in June. Nath gave me a fossil purse,which I had been wanting a lot! He did such a good job picking it out for me! Nath and I went hiking to Skinny Dip Falls. We also enjoyed a delicious dinner with bang bang shrimp at Bonefish and I got some sugar-free, dairy free ice cream from Whole Foods! Another exciting adventure we had was the "Own the Night" concert with Lady Antebellum, Darius Rucker, and best of all Thompson Square! We were able to go thanks to my dad, who gave us two tickets to take Kilian, my little sister. We all three had a lot of fun! We also celebrated July 4th by staying at home eating a delicious steak dinner and watching Act of Valor (pretty good movie).

and no dairy so it's good as long as I'm concerned.

Thankfully, by July 4th we were allowed steak and veggies!
Since our apartment flooded, we had 5 fans and a dehumidfier
throughout the house. It was very loud!
     Some not so exciting events that happened near the end of July were my car being infiltrated with ants, almost catching the house on fire, and our apartment flooding. Thankfully, God protected us and all of our stuff except for a few school books. Sadly, school has been taking much of our time these days. I will be completely done as soon as I write one more paper and take the final. Yay! Friday we leave for Charlotte for a weekend getaway to celebrate our 1 year anniversary! After that life should be back to normal as in we should be able to do things other than school, like hanging out with friends and Shepherding Group, which we both miss going to weekly. I am excited to see how much "free" time I actually get now that school is over. The main thing I want to add is working out. I miss it.I have a few goals, but we will see if any of them come to reality.

May

    May has been a fun, busy month! From graduation, Indiana, online classes, a new full-time job, a trip to Georgia, and my brother's graduation, there has not been a dull moment! I am very thankful for my husband in this busy time of life that we are living right now. If it were not for him, we would probably be eating some pretty convenient yet extremely unhealthy dinners. Thankfully, we are not only eating healthy food for dinner, but we also enjoy some delicious GAPS certified cookies and cake, which is my favorite part of this diet! Here are some pictures from the month:
This month has really flown by and while it has been pretty busy, we definitely had some fun along the way. 
Indiana Art Museum
1. The most exciting thing to happen was graduation from college. Nathanael and I had an exciting weekend celebrating this event in our lives.
2. We were able to go to Indiana for Mother's Day, which was a lot of fun. We also went to the art museum with Natasha, Elijah, and Mom. I wish we could go up there more often. Hopefully for Christmas!
3. I am thankful for the full-time job right out of college where I am learning a lot that will benefit us in the future.
4. I cannot believe that my little brother and cousin have graduated high school. It seems just yesterday we were playing in mud puddles or dressing up the cat in doll clothes.
5. I am glad 1/4 of these online classes are done. I am looking forward to when I am completely done with school and can do all the fun cooking!

Casualties of War


Well have almost made it through week 3...not without a few casualties along the way. A few kitchen items have been sacrificed for the good of the cause but we march on in the war against sugar.  
Tonight my husband cooked my two favorite veggies-peas and butternut squash and he made me healthy sweets for dessert :)


It still works...functionality over aesthetics now!

First Day of GAPS


The broth we drink every morning.
Yesterday Nathanael and I started the full GAPS diet. We began our day with a cup of water and a probiotic then we enjoyed a cup of beef broth! Afterwards I had some eggs. Yesterday also was my first day as an Administrative Assistant at my new job! It was a lot of fun, but there's a lot to learn! For dinner we enjoyed PIZZA! Our favorite except to be GAPS appropriate we had an almond crust and yogurt cheese. Nathanael made some turkey sausage that was delicious! The only thing I thought was lacking was my beloved Black Cherry Soda. :(

Our Last of Sugar


Tomorrow begins the GAPS diet, so tonight we decided to have a small party of strawberries and cheesecake! I also enjoyed my last soda for awhile :( This will be an interesting feat for both of us. The reason why we are about to endeavor this crazy diet is because Nathanael is trying to cure his asthma and we are both trying to cure our tummies, so they are better able to digest food. We decided to begin the full GAPS diet after graduation, which I thought would never get here, but sadly it did. So tomorrow we begin the full GAPS diet. On June 11, 2012, we will begin the Introduction diet, which is much harder.
